Turn your favorite chocolate cupcake recipe into Chocolate Mint Cupcakes for St. Patrick’s Day!
My friend made these adorable (and delicious) chocolate mint cupcakes for St. Patrick’s Day. His friends (me being at the front of the queue) were lining up for the taste test and spending more than a little time just oohing-and-ahhhhing, with lots of “oohs” because the cupcakes looked so pretty, and even more contented “ahhhhs” after the first bite.
The secret is in the marriage of dreamy chocolate cake and creamy mint frosting.
I’m going to assume that you do have a favorite chocolate cupcake recipe. I’m mean, it goes without saying, right? Because everyone does. Or almost everyone. But maybe a few of you are new to baking and haven’t found a go-to chocolate cupcake recipe as yet. In that case, I’d suggest either 1) a good-quality, store-bought cupcake mix or 2) cracking open the trusted cookbook for generations of cooks: Better Homes and Gardens: New Cook Book, 16th Edition.
Now for that artistic swirl of buttercream frosting. Wait till you see how easy that can be! There are also tons of frosting recipes out there too, but here’s the one from Betty Crocker for Mint Frosting. You can adjust the amount of peppermint extract to taste and also substitute shortening for some, or all, of the butter for a bit more staying power in warmer temperatures. Either food coloring or icing color gel will tint the frosting green.
