Sugar-Free Instant Rice Pudding Jar Mix

A new "gift in a jar" twist on an old-fashioned recipe: this delicious low calorie rice pudding jar mix uses sugar-free, fat free instant vanilla pudding and instant rice. I am told that it is also suitable for diabetic diets.

Just print out our jar labels, follow the directions for layering, and decorate your jar recipe gift with a paper doily and thin ribbon.

Diabetic Rice Pudding Mix in a Jar

Ingredients:

  • 1 package of sugar and fat-free instant vanilla pudding
  • approximately 3/4 cup instant rice
  • 3 tablespoons raisins
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg


  • To Make the Layered Jar Gift:
    Empty pudding mix into a 1 cup jar; add cinnamon and nutmeg, using a spoon to spread the spices around the edge of the jar to be visible from the outside. Add a 1/2 inch layer of instant rice and top with half the raisins; repeat these layers. Fill the jar to the top with remaining rice.

    Low Calorie Rice Pudding


    Directions:

    Empty contents of jar into a small saucepan. Add 3 cups of 1% milk and whisk together. Bring to a boil at medium high heat, stirring constantly. Remove from heat and let stand five minutes. Serve hot or cold; sprinkle with cinnamon if desired.

    Could you use dry milk in the jar? Some of our Native American Elders do not always have milk available. Or would canned milk work, tho I know it would add calories. It is such a wonderful idea!

    I made this recipe for myself today to test it out. It was great! But I made a few changes...
    1) I substituted BROWN minute rice for the white rice (lower GI, high fiber, etc!)
    2) I substituted soy milk for the 1% to see if it would still work (for those lactose intolerant friends of mine who I may give this to)
    3) It doesn't specify in the recipe but I believe the pudding mix should be the 4 serving size box (as opposed to the 6 serving boxes you can buy). Four serving worked for me.

    This is so easy and a very nice occasional treat. Thanks!

    Hi,
    Do you mean that you empty one whole package of pudding in, then again add another whole package of pudding? What does "repeat the layers" mean? Should it not say "two packages of vanilla pudding" in the ingredients list? Or is it justto layer the remaining rice, beepe, and raisins ?

    I believe it means empty the whole pudding pack in the jar, and then layer the other ingredients as suggested. Then repeat those other ingredients (the whole pudding pack is at the bottom of the jar already) as shown in the picture.

    ....continued.... We used many different recipes to create a whopping total of 57 gift jars this Christmas!! Making gift jars was so EASY & FUN, that our teen daughter made alot of them herself & even made a bunch of extra jars & had them sitting in a basket near our Christmas tree to give to those unexpected guests who dropped by during the holidays! ....Everyone take NOTE if you or someone you know enjoys RICE PUDDING....     I just wanted to let you know how AWESOME your site is!!! This is the first time we ever made gift jars to give at Christmas & using some of your recipes, they turned out FABULOUS!!! We wanted our jars to have a real rustic hand made look to them, so we cut small brown paper lunchbags (a pk. of 100 is only like $1-$2) up the seem of the bag, so it would open up flat. We traced a medium coffee can lid & were able to get 2 "fabric" jar toppers out of ONE paper bag!! After cutting out the circles with pinking shears, we crumbled them up & flatted them back out, crumbled them again, flattened them back out again, & were able to achieve a real rustic "General Store" feel to them. When the jars were filled, we placed our round paper bag "fabric" jar toppers on top of each jar & secured them using a rubber band. Then over top of the rubber band, we tied simple jute twine with our hand made instruction hang tags. We made the hang tags out of some left over vintage wrapping paper & the fronts of some beautiful vintage Christmas cards of years past. The hang tags looked FABULOUS with the brown paper bag jar toppers. ....continued....

    I can't remember exactly, but seem to recall that the package made four servings.
