Instant Potato Soup
Gift in a Jar Mix

This is a nice jar mix recipe to make for someone who takes lunch to work - all they need do is add a cup of boiling water to enjoy a tasty bowl of potato soup.
Instant Potato Soup Mix
2 cups instant mashed potatoes
1½ cups instant milk powder
2 tbsps instant chicken boullion
2 tsp dried minced onion
1 tsp dried parsley
¼ tsp pepper
¼ tsp dried thyme
1/8 tsp turmeric
1½ tsp seasoning salt
Combine all ingredients in a bowl and mix. Store in 1 quart jar. Alternatively, you could divide the mix into small ziploc bags, adding 1/2 cup to each bag, as a handy addition to pack with your lunch.
To Serve:
Place ½ cup instant soup mix in a soup bowl, cup or mug. Add one cup of boiling water and stir until smooth.
I made this as gifts and also for our home this year at Christmastime. I knew it was going to be quick and easy to make, but I was truly surprised by just HOW delicious it really is! I will be taking this to work for MY lunches, too!!! Thank you very much for having this online for us all to see! People think I'm SO clever for putting this together! LOL Thank you!

I love this soup. I put dried leeks instead of onions and it tastes like heaven. I also camp out a lot and this is wonderful when you have your tent up and it makes for a great way to settle in.
This is really good if you add some bacon bits to it- you have to be sure and the type of bacon bits that are shelf stable- needs no refridgeration after being opened!!
I have issues with my galbladder, lots of stones and awaiting surgery. I made this soup years ago as a gift and now I am having trouble eating because my stomach is so upset all the time. THIS SOUP IS WONDERFUL!!! I can eat this soup and it settles my stomach allowing me to not be miserable for a few hours.. lol I highly recommend it to anyone who is having issues with upset stomach!
I really love this soup mixture idea. I was looking for ideas of soups and such to send to my son overseas. He says the food isn't much to be desire over there, and I can send this so he can at least get some good food in his belly.

I used to make a potatoe soup when he was younger and I just hope he will love this as much as when he was little.
